Savory Mushroom and Spinach Quesadillas

1 cup mushrooms, sliced (cremini or button varieties work well)

2 cups fresh spinach, roughly chopped

1 clove garlic, minced

1 teaspoon dried oregano

1 ½ cups shredded mozzarella cheese

4 large flour tortillas

1 tablespoon butter (for grilling)

Optional toppings: sour cream, salsa, or guacamole

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced mushrooms. Sauté for about 5 minutes, stirring occasionally, until the mushrooms have softened and turned a lovely golden brown. Next, add the minced garlic and dried oregano, continuing to cook for another minute until the garlic becomes fragrant.

    Add Spinach: Incorporate the chopped spinach into the skillet, stirring well to combine. Cook for an additional 2-3 minutes, or until the spinach is wilted and tender. Season the mixture with salt and pepper to taste. Once cooked, remove the skillet from the heat and set aside the filling.

      Assemble Quesadillas: Take one tortilla and lay it flat on a clean surface. Sprinkle ¼ cup of shredded mozzarella cheese evenly over one half of the tortilla. Add a generous scoop of the sautéed mushroom and spinach mixture on top of the cheese, then sprinkle another ¼ cup of cheese over the filling. Carefully fold the tortilla in half to encase the filling.

        Cook the Quesadilla: In the same skillet (or a separate one if necessary), melt ½ tablespoon of butter over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on one side, until the tortilla is golden brown and crispy. Gently flip the quesadilla over, buttering the second side before cooking for another 3-4 minutes, or until the cheese is melted and the tortilla is perfectly crisp.
