12 oz penne pasta

1 lb Italian sausage (choose sweet or spicy, casings removed)

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (your choice of red or green), diced

1 can (14 oz) diced tomatoes (including juices)

2 cups fresh spinach

1 tsp Italian seasoning

1 tsp red pepper flakes (optional for added heat)

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt and black pepper, to taste

Fresh basil leaves for garnish

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until it’s al dente. Drain the pasta and set it aside.

    Brown the Sausage: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the Italian sausage. Use a spatula to break the sausage into small pieces. Sauté for about 5 to 7 minutes, until the sausage is nicely browned and fully cooked. Once done, remove the sausage from the skillet and set it aside on a plate.

      Sauté Vegetables: In the same skillet, add the finely chopped onion. Sauté it for about 3 minutes until it becomes translucent. Next, add the minced garlic and diced bell pepper to the skillet, cooking for an additional 3 to 4 minutes until the bell pepper has softened.
