Ingredients

8 oz (225 g) fresh mushrooms, sliced (choose between button or cremini)

4 cups fresh spinach, thoroughly washed and roughly chopped

3 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1 small onion, diced

½ teaspoon red pepper flakes (optional for a kick)

¼ teaspoon salt (adjust to your preference)

¼ teaspoon black pepper (adjust to your preference)

2 tablespoons balsamic vinegar

2 tablespoons freshly grated Parmesan cheese (optional)

Fresh parsley, finely chopped (for garnish)

Instructions

Heat the Oil: In a large skillet, pour in the olive oil and warm it over medium heat. Allow the oil to heat for around one minute, ensuring it’s ready for cooking.

Sauté Onions & Garlic: Introduce the diced onion into the skillet, cooking and stirring frequently until it turns translucent, which should take about 3-4 minutes. Add the minced garlic and optional red pepper flakes, and sauté for an additional 30 seconds to release the flavors.

Cook the Mushrooms: Slightly raise the heat and add the sliced mushrooms to the skillet. Sauté the mushrooms for approximately 5-7 minutes, stirring occasionally, until they are nicely browned and tender.

Add Spinach: Once the mushrooms are cooked, incorporate the roughly chopped spinach into the skillet. Stir well and cook for another 2-3 minutes, allowing the spinach to wilt down and blend with the other ingredients.

Season & Flavor: Drizzle the balsamic vinegar evenly over the mushroom and spinach mixture. Sprinkle in salt and black pepper, stirring everything together to enhance the flavors.

Finish & Serve: Remove the skillet from heat. If desired, shower the sautéed mixture with freshly grated Parmesan cheese for a creamy finish. Garnish generously with chopped parsley before serving to add a fresh touch.
