1 lb (450g) rigatoni pasta

1 lb (450g) Italian sausage (choose sweet or spicy, casings removed)

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (adjust according to your heat preference)

Salt and pepper, to taste

1 cup (240ml) heavy cream

1 ½ cups (150g) shredded mozzarella cheese

½ cup (50g) grated Parmesan cheese

2 tbsp olive oil

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni and cook until al dente, following the package instructions (usually around 8-10 minutes). Once done, drain the pasta and set it aside.

      Brown the Sausage: In a large skillet, heat the olive oil over medium heat. When hot, add the Italian sausage. Cook for about 5-7 minutes, breaking it apart with a spatula into bite-sized pieces, until it's well browned.

        Sauté the Vegetables: Add the finely chopped onion to the skillet with the sausage. Sauté for about 3-4 minutes until the onion becomes translucent. Next, stir in the minced garlic and cook for an additional 1-2 minutes, or until fragrant.

          Combine Tomato Mixture: Pour in the crushed tomatoes, followed by the dried oregano, dried basil, red pepper flakes, and a pinch of salt and pepper. Stir well, and let the mixture simmer gently for about 10 minutes to meld the flavors beautifully.

            Incorporate the Cream: Remove the skillet from the heat and gradually stir in the heavy cream until the mixture is smooth and well integrated.

              Combine with Pasta: In a large mixing bowl, combine the cooked rigatoni with the sausage and tomato cream mixture. Toss gently until the pasta is evenly coated with the delicious sauce.

                Transfer to Baking Dish: Grease a 9x13-inch (23x33 cm) baking dish. Pour half of the pasta mixture into the dish and spread it evenly. Sprinkle half of the shredded mozzarella and grated Parmesan cheese on top. Layer the remaining pasta mixture over this and finish with the rest of the cheese.

                  Bake the Dish: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes. Then, remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.
