Ingredients

2 large sweet potatoes (approximately 1.5 lbs), peeled and cut into 1-inch cubes

1 whole head of garlic

2 tablespoons olive oil, divided

2 tablespoons unsalted butter, softened

½ cup milk (or your choice of dairy-free alternative)

Salt, to taste

Freshly ground black pepper, to taste

Fresh chives or parsley, finely chopped, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). This will ensure that it’s hot enough to roast the garlic to perfection.

Prepare the Garlic for Roasting: Take the head of garlic and slice off the top to expose the individual cloves. Drizzle 1 tablespoon of olive oil over the exposed cloves, ensuring they are well coated. Wrap the garlic tightly in aluminum foil and place it on a baking sheet. Roast in the preheated oven for about 30-35 minutes, or until the cloves are soft and golden, with a sweet, caramelized aroma.

Boil the Sweet Potatoes: While the garlic is roasting, bring a large pot of salted water to a boil. Add the cubed sweet potatoes and cook for approximately 15-20 minutes, or until they are fork-tender. Once cooked, drain the sweet potatoes and set them aside to cool slightly.

Combine and Mash: In a large mixing bowl, add the drained sweet potatoes. Carefully squeeze the roasted garlic cloves out of their skins into the bowl (be cautious, as they may be hot!). Add the softened butter, the remaining tablespoon of olive oil, and the milk to the mix.

Mash to Perfection: Using a potato masher or a hand mixer, mash the ingredients together until you achieve a smooth and creamy texture. Feel free to adjust the amount of milk based on your desired consistency. Season the mash generously with salt and freshly ground black pepper, mixing well to ensure all the flavors meld together.

Garnish and Present: Transfer the creamy sweet potato mash to a beautiful serving dish. For an elegant touch, sprinkle with fresh, chopped chives or parsley. This will add a pop of color and freshness to your dish.
