Roasted Garlic and Broccoli Pita Pizza

2 whole wheat pitas

1 cup broccoli florets (fresh or frozen)

4 cloves of garlic, peeled

1 tablespoon olive oil (plus extra for drizzling)

1 teaspoon salt (divided)

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for some heat)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/4 cup sun-dried tomatoes, chopped

1 tablespoon fresh lemon juice

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) so it's hot and ready for baking.

    Prepare the Garlic: Take a small sheet of aluminum foil, place the peeled garlic cloves in the center, and drizzle them with a touch of olive oil. Sprinkle a small pinch of salt over the garlic, then fold the foil tightly to create a sealed packet.

      Roast the Garlic: Position the garlic packet directly on the oven rack and roast for approximately 20 minutes, or until the cloves become soft and turn golden brown. Once done, remove from the oven and allow the packet to cool slightly.

        Blanch the Broccoli: While the garlic is roasting, bring a pot of water to a rolling boil. Add the broccoli florets and blanch them for about 3 minutes, just until they are vibrant green and slightly tender. Drain the broccoli, then quickly plunge it into a bowl filled with ice water to halt the cooking process. After a few minutes, drain again and set aside.

          Assemble the Pitas: Place the whole wheat pitas on a baking sheet. Drizzle a little olive oil over the pitas, and generously season with the remaining salt, black pepper, and red pepper flakes (if using) to enhance the flavor.
