Ingredients

200g assorted cured meats (such as prosciutto, salami, and chorizo)

150g assorted cheeses (like aged cheddar, brie, and blue cheese)

1 cup seasonal vegetables (for example, bell peppers, zucchini, and mushrooms)

1 cup assorted olives (both green and black varieties)

1 cup mixed nuts (including almonds, walnuts, and pecans)

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

2 teaspoons fresh rosemary, finely chopped

2 teaspoons fresh thyme, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly cracked black pepper to taste

Optional: fresh baguette or an assortment of crackers for serving

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to prepare for roasting.

Prepare the Vegetables: Wash and slice the seasonal vegetables into bite-sized pieces. Transfer them into a mixing bowl to make seasoning easier.

Season the Vegetables: Drizzle the olive oil and balsamic vinegar over the chopped vegetables. Then, add the chopped rosemary, thyme, garlic powder, onion powder, salt, and freshly cracked black pepper. Toss everything together until the vegetables are evenly coated in the seasoning.

Arrange the Ingredients: On a large baking sheet or roasting pan, spread the seasoned vegetables out in a single layer to ensure even roasting.

Add Meats and Cheeses: Next to the seasoned vegetables, artfully arrange the assorted cured meats and cheeses without overcrowding them, creating an inviting presentation.

Roast: Place the baking sheet in your preheated oven and roast for 20-25 minutes, or until the vegetables are tender and have a hint of caramelization, and the cheeses are melting slightly.

Prepare Nuts and Olives: While the charcuterie is roasting, take the opportunity to prepare a small serving bowl for the assorted olives and another bowl for the mixed nuts, making them ready for guests.

Assemble the Board: After the roasting time is complete, carefully remove the baking sheet from the oven. Allow it to cool for a few minutes, then transfer everything to a wooden board or a large platter for an eye-catching display.

Serve: Offer your beautiful charcuterie display alongside fresh baguette slices or a variety of crackers. For an extra touch, garnish with additional fresh herbs to elevate the visual appeal.
