1 medium head of cauliflower, cut into bite-sized florets

2 tablespoons extra-virgin olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

½ teaspoon garlic powder

Salt and freshly ground black pepper, to taste

8 small corn or flour tortillas

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

½ cup red cabbage, finely shredded

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Optional: Hot sauce, for additional heat

Preheat the oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleaning afterward.

    Prepare the cauliflower: In a large mixing bowl, combine the cauliflower florets with the olive oil, smoked paprika, ground cumin, chili powder, garlic powder, and a sprinkle of salt and pepper. Mix thoroughly until each floret is well-coated with the spice blend.

      Roast the cauliflower: Spread the seasoned cauliflower evenly on the prepared baking sheet. Roast in the preheated oven for about 25 to 30 minutes, stirring halfway through for even cooking. The cauliflower should be tender and beautifully golden brown when done.

        Warm the tortillas: While the cauliflower is roasting, it's time to warm the tortillas. You can heat them in a dry skillet on medium heat for approximately 30 seconds on each side. Alternatively, wrap them in aluminum foil and place them in the oven during the last 5 minutes of the cauliflower roasting.
