1 (15 oz) can diced tomatoes, including their juice

2 cloves garlic, finely minced

1 bell pepper (any color works), chopped into bite-sized pieces

1 medium zucchini, diced into small cubes

1 cup corn kernels (can be fresh, frozen, or canned)

2 cups vegetable broth

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for extra heat)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

Fresh cilantro leaves, for garnish

Sour cream or Greek yogurt, optional for a creamy topping

Heat the Oil: In a large pot over medium heat, pour in the olive oil. Once the oil is hot and shimmering, add the diced onion. Sauté for about 3-4 minutes until the onion becomes translucent and slightly softened.
