1 block firm tofu, pressed and cut into 1-inch cubes

2 tablespoons soy sauce, divided

1 tablespoon olive oil

1 tablespoon sesame oil

1 bell pepper (any color), sliced into thin strips

1 cup broccoli florets, bite-sized

1 cup snap peas, trimmed and halved if large

1 medium carrot, julienned (thin matchsticks)

3 cloves garlic, minced

1-inch piece fresh ginger, grated

2 green onions, thinly sliced

1 teaspoon sesame seeds (for garnish)

Salt and black pepper, to taste

Cooked rice or quinoa (for serving)

Prep the Tofu: Begin by pressing the tofu block between paper towels or a clean kitchen towel to eliminate excess moisture. After pressing, slice the tofu into bite-sized cubes (around 1-inch).

    Marinate the Tofu: In a medium mixing bowl, drizzle 1 tablespoon of soy sauce over the cubed tofu. Gently toss the tofu to ensure all sides are coated in soy sauce. Let it marinate for 10 minutes to allow the flavors to absorb while you prep the vegetables.

      Heat the Pan: In a large skillet or wok, heat the olive oil over medium-high heat. When the oil is shimmering, carefully add the marinated tofu cubes to the pan. Sauté the tofu for about 6-8 minutes, turning frequently with a spatula, until it is golden brown and crispy on all sides. Once cooked, remove the tofu from the pan and set it aside.
