Ingredients

12 oz (340g) spaghetti or your preferred pasta

1 ½ cups cherry tomatoes, halved

3 cloves garlic, finely minced

¼ cup fresh basil leaves, chopped

1 teaspoon balsamic vinegar

¼ cup extra virgin olive oil, plus more for drizzling

Sea salt and freshly cracked pepper, to taste

½ cup freshly grated Parmesan cheese (optional)

1 teaspoon red pepper flakes (optional, for heat)

Instructions

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente, typically about 8-10 minutes. Before draining, reserve ½ cup of the starchy pasta cooking water. Drain the pasta and set it aside.

Prepare the Bruschetta Topping: While the pasta is cooking, prepare the bruschetta topping. In a mixing bowl, combine the halved cherry tomatoes, minced garlic, chopped fresh basil, balsamic vinegar, and ¼ cup of extra virgin olive oil. Season with sea salt, freshly cracked pepper, and red pepper flakes (if using). Gently toss the mixture until all the tomatoes are well coated and the flavors meld.

Combine Pasta and Topping: Return the drained spaghetti to the pot you cooked it in. Pour the bruschetta mixture over the pasta. Gradually add the reserved pasta water a little at a time, tossing continuously until the pasta is well coated in a light, flavorful sauce.

Serve: Transfer the pasta to serving dishes. Drizzle with a little extra olive oil for richness and top with freshly grated Parmesan cheese if desired. Serve immediately while warm, and enjoy!
