Ingredients

For the Chicken Tacos:

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, for garnish (optional)

For the Avocado Lime Sauce:

1 ripe avocado, pitted and peeled

1/4 cup Greek yogurt or sour cream

Juice of 1 lime

1 clove garlic, minced

Salt, to taste

Water, as needed for desired consistency

Instructions

Prepare the Avocado Lime Sauce:

    - In a blender or food processor, add the peeled avocado, Greek yogurt (or sour cream), fresh lime juice, minced garlic, and a pinch of salt.

      - Blend until smooth and creamy. If the sauce seems too thick, add water one tablespoon at a time until it reaches your preferred consistency. Taste and adjust the seasoning as needed. Set the sauce aside.

        Cook the Chicken:

          - In a large skillet, heat olive oil over medium-high heat until shimmering.

            - Stir in the chicken pieces, ensuring they are evenly coated with the olive oil. Sprinkle with chili powder, ground cumin, garlic powder, onion powder, salt, and freshly cracked black pepper.

              - Sauté the chicken for about 6-8 minutes, stirring occasionally, until it is golden brown and no longer pink in the center (check for an internal temperature of 165°F or 75°C).

                Warm the Tortillas:

                  - As the chicken is cooking, warm the tortillas. You can do this in a dry skillet over medium heat for 30 seconds on each side or wrap them in a damp paper towel and microwave them for about 20 seconds until soft and pliable.

                    Assemble the Tacos:

                      - Take a warm tortilla and place a generous spoonful of the cooked chicken in the center. Top with shredded lettuce, diced tomatoes, and a sprinkle of cheese.

                        - Drizzle the avocado lime sauce generously over the filled tortilla and garnish with fresh cilantro if desired.

                          Serve:

                            - Serve the tacos immediately while they're warm, accompanied by extra lime wedges on the side for an added burst of zesty flavor.
