Ingredients

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon paprika

Salt and pepper, to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (choose cheddar or a Mexican blend)

For the Fresh Avocado Salsa:

2 ripe avocados, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and finely diced (optional, adjust to taste)

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt, to taste

Instructions

Prepare the Avocado Salsa: In a medium bowl, combine the diced avocados, finely chopped red onion, and diced jalapeño (if desired). Squeeze in the lime juice and add the chopped cilantro. Gently mix all ingredients together, being careful not to mash the avocados, and season with salt to taste. Set aside for flavors to meld.

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3 minutes, or until the onion becomes translucent and soft. Stir in the minced garlic and cook for an additional minute, letting the garlic become fragrant.

Season the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Using a wooden spoon, break apart the beef as it cooks. Continue cooking until the beef is browned and fully cooked through, approximately 5-7 minutes. If there's excess fat, drain it off carefully.

Add Spices: To the cooked beef, stir in the ground cumin, chili powder, paprika, and season with salt and pepper to taste. Reduce the heat to low and allow the mixture to simmer for 2-3 minutes, giving the spices time to infuse the beef with flavor.

Warm the Tortillas: In a separate dry skillet, warm the corn tortillas over medium heat, flipping them after about 30 seconds. Heat until they are pliable and just starting to get a bit warm, which should take about 1 minute in total.

Assemble the Tacos: On each warmed tortilla, scoop a generous portion of the seasoned beef mixture. Top each taco with shredded lettuce, diced tomatoes, and a sprinkle of shredded cheese. Finish with a spoonful of the fresh avocado salsa for a burst of flavor.

Serve and Enjoy: Serve the tacos immediately, accompanied by your favorite hot sauce or extra lime wedges for squeezing. Enjoy the vibrant flavors and textures of this delightful meal!
