Ingredients

1 lb ground chicken

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 bell pepper, finely diced (red or yellow for color)

1 cup water chestnuts, finely chopped for crunch

1/4 cup green onions, chopped (both green and white parts)

1/4 cup soy sauce (use tamari for a gluten-free option)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and freshly cracked black pepper to taste

1 head of butter or iceberg lettuce, leaves carefully separated

Optional toppings: Chopped roasted peanuts, fresh cilantro, sriracha sauce, or lime wedges for extra zest

Instructions

Heat the oil: In a large skillet, add the vegetable oil and heat it over medium-high heat until shimmering.

Cook the chicken: Add the ground chicken to the skillet and cook, breaking it apart with a spatula. Continue cooking for about 5-7 minutes, or until the chicken is browned and fully cooked.

Add aromatics: Stir in the minced garlic and ginger, cooking for one additional minute, or until they become aromatic but not burned.

Incorporate vegetables: Add the finely diced bell pepper, chopped water chestnuts, and green onions to the skillet. Sauté for 3-4 minutes, stirring occasionally, until the vegetables are tender yet still crunchy.

Sauce it up: Pour in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Mix everything well and let it cook for an additional 2-3 minutes, allowing the flavors to blend together. Taste the mixture and adjust the seasoning with salt and freshly cracked black pepper if needed.

Prepare lettuce leaves: While the chicken mixture is cooking, gently separate the lettuce leaves and rinse them under cold water. Pat them dry with a paper towel to maintain their crispness.

Assemble wraps: On each cleaned lettuce leaf, spoon a generous portion of the chicken mixture at the center.

Garnish and serve: Finish off your wraps with your choice of chopped roasted peanuts, fresh cilantro, or a drizzle of sriracha for added heat. Fold the lettuce leaves around the filling like a taco and enjoy your savory and refreshing wraps!
