1 lb (450g) flank steak, thinly sliced against the grain

3 cups broccoli florets

1 bell pepper (red or yellow), sliced into thin strips

3 cloves garlic, minced

1 inch piece of fresh ginger, finely grated

4 tablespoons reduced-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (or sesame oil for added flavor)

1 tablespoon rice vinegar

1 tablespoon honey or brown sugar

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Prepare the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, honey (or brown sugar), and cornstarch until smooth. Set this mixture aside to thicken slightly.

    Marinate the Beef: In a separate bowl, add the sliced flank steak and half of the prepared sauce. Toss to coat the beef evenly, then allow it to marinate for approximately 15 minutes as you prep the vegetables.

      Blanch the Broccoli: Bring a pot of water to a vigorous boil. Carefully add the broccoli florets and blanch for about 2 minutes, until they turn bright green and are just tender. Immediately transfer them to an ice bath to halt the cooking process, then drain and set aside.

        Stir-Fry the Beef: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the marinated beef in a single layer.
