2 cups masa harina (corn flour)

1 ½ cups warm water

½ cup refried beans (black or pinto beans)

¼ cup cooked and seasoned ground meat (optional, such as pork or chicken)

½ cup finely chopped cooked spinach (optional)

1 teaspoon ground cumin

Salt and pepper to taste

For the Curtido (Cabbage Slaw):

2 cups finely shredded cabbage

½ cup grated carrots

¼ cup finely chopped onion

¼ cup apple cider vinegar

1 teaspoon dried oregano

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine 2 cups of masa harina with 1 teaspoon of salt. Gradually pour in 1 ½ cups of warm water, mixing with your hands until a smooth and pliable dough forms. If desired, add 1 tablespoon of vegetable oil for extra richness.

      - Once mixed, cover the dough with a damp cloth and let it rest for about 15 minutes to prevent it from drying out.

        Create the Filling:

          - In a separate bowl, combine 1 cup of shredded cheese, ½ cup of refried beans, optional ¼ cup of cooked and seasoned ground meat, ½ cup of finely chopped cooked spinach, 1 teaspoon of ground cumin, and salt and pepper to taste. Mix thoroughly until all ingredients are evenly distributed.

            Make the Curtido:

              - In another bowl, mix together 2 cups of finely shredded cabbage, ½ cup of grated carrots, and ¼ cup of finely chopped onion. Add in ¼ cup of apple cider vinegar and 1 teaspoon of oregano, seasoning with salt to taste. Combine well, and let this mixture sit for at least 30 minutes, allowing the flavors to meld.

                Assemble the Pupusas:
