2 cups spelt flour

1 cup walnuts, chopped and toasted for enhanced flavor

1/4 cup olive oil or melted coconut oil (for moisture)

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon sea salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup milk (feel free to use dairy or your favorite plant-based milk)

2 large eggs

Preheat your oven: Preheat the oven to 350°F (175°C). Lightly grease a 9x5 inch loaf pan or line it with parchment paper to prevent sticking.

    Mix dry ingredients: In a large mixing bowl, whisk together the spelt flour, baking powder, baking soda, sea salt, ground cinnamon, nutmeg, and ginger until the mixture is evenly blended. Set aside this dry mix.

      Prepare wet ingredients: In a separate bowl, combine the pumpkin puree, honey (or maple syrup), olive oil (or melted coconut oil), and eggs. Whisk until the mixture is smooth and fully combined.

        Combine mixtures: Gently pour the wet mixture into the bowl of dry ingredients. Add the milk and stir with a spatula or wooden spoon until just mixed. Avoid overmixing; it’s okay if there are a few lumps.
