1 cup rolled oats

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

½ cup brown sugar, tightly packed

¼ cup granulated sugar

½ cup unsalted butter, melted and cooled slightly

½ cup canned pumpkin puree

1 large egg, at room temperature

1 teaspoon vanilla extract

½ cup semi-sweet chocolate chips

¼ cup chopped walnuts (optional)

Instructions
 

Begin by preheating your oven to 350°F (175°C). Prepare a 9x9 inch baking pan by lightly greasing it or lining it with parchment paper for easy removal later.

    In a large mixing bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Whisk everything together until well mixed, ensuring there are no lumps.

      In a separate bowl, blend the melted butter, brown sugar, granulated sugar, pumpkin puree, egg, and vanilla extract together. Whisk until the mixture reaches a smooth and creamy consistency.

        Gradually pour the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to overmix. A few lumps are perfectly fine!

          Fold in the chocolate chips and, if you’re using them, the chopped walnuts. Mix just enough to incorporate them into the batter.

            Transfer the batter into the prepared baking pan, spreading it evenly with a spatula and smoothing the top.

              Bake in your preheated oven for 25-30 minutes. The bars are ready when the edges turn golden brown and a toothpick inserted into the center comes out clean.

                Once baked, remove the pan from the oven and allow the bars to cool in the pan for approximately 10 minutes. Carefully lift the bars out using the parchment paper and let them cool completely on a wire rack.
