1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon ground ginger

½ cup granulated sugar

½ cup packed light brown sugar

½ cup vegetable oil

2 large eggs

1 cup pure pumpkin puree (canned or homemade)

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

½ cup chopped walnuts or pecans (optional)

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it lightly with cooking spray or butter, or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a medium mixing bowl, combine the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, nutmeg, and ginger. Whisk these together well until they are fully integrated and there are no lumps.

      Combine Sugars & Oil: In a separate large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil. Continue mixing until this mixture becomes smooth and creamy, indicating that the sugars are well dissolved into the oil.

        Incorporate Eggs and Pumpkin: Add the eggs to the sugar and oil mixture one at a time, whisking thoroughly after each addition to ensure they are well mixed. Next, stir in the pumpkin puree and vanilla extract until the ingredients form a smooth batter.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture. Use a spatula or wooden spoon to gently stir and combine until just combined. Take care not to over-mix, as this could make the loaf dense.
