Ingredients

1 cup rolled oats

1/2 cup almond butter (or substitute with creamy peanut butter)

1/2 cup protein powder (choose vanilla or chocolate flavor)

1/4 cup honey or maple syrup (for a vegan option)

1 ripe banana, well mashed

1/4 cup dark chocolate chips (or opt for dried fruit for a healthier choice)

1/4 cup chopped nuts (such as walnuts, almonds, or pecans)

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

Optional: 1/2 teaspoon cinnamon (for an extra flavor dimension)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Prepare the Mixture: In a large mixing bowl, combine the rolled oats, protein powder, baking soda, salt, and if using, the cinnamon. Stir these dry ingredients thoroughly to ensure they are evenly mixed.

Mix Wet Ingredients: In a separate bowl, blend together the almond butter, honey (or maple syrup), mashed banana, and vanilla extract. Mix until the mixture achieves a smooth consistency with no lumps.

Combine Ingredients: Gradually pour the wet mixture into the bowl of dry ingredients. Stir continuously until all ingredients are fully combined. You should have a thick, slightly sticky dough.

Add Mix-Ins: Carefully fold in the dark chocolate chips and chopped nuts. Ensure they are evenly distributed within the dough for balanced flavors in each bite.

Shape the Cookies: Using a tablespoon or a cookie scoop, portion out the dough onto the lined baking sheet, leaving about 2 inches of space between each to allow for spreading. Lightly press down on each portion to flatten them slightly.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes. The cookies are done when the edges have turned golden brown. Note that the centers may appear slightly underbaked, but they'll firm up as they cool.

Cool Down: After baking, remove the cookies from the oven and let them cool on the baking sheet for approximately 5 minutes. Then, transfer them to a wire rack to cool completely.

Store or Serve: Enjoy your warm protein-packed cookies immediately, or store them in an airtight container at room temperature for up to a week. They make for a perfect quick breakfast or on-the-go snack!
