Ingredients

14 oz firm tofu, pressed and cut into 1-inch cubes

1 cup fresh pineapple juice

1/4 cup soy sauce

2 tbsp brown sugar

1 tbsp rice vinegar

1 clove garlic, minced

1 tsp ginger, freshly grated

1 tbsp cornstarch

2 tbsp water

2 tbsp vegetable oil (for frying)

1/4 tsp black pepper

1/4 tsp salt

Fresh pineapple chunks (for garnish)

Chopped green onions (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Tofu: Start by pressing the tofu. Place it under a heavy object for at least 30 minutes to expel excess moisture. Once the pressing is complete, carefully cut the tofu into 1-inch cubes to ensure even cooking.

Make the Pineapple Glaze: In a medium saucepan, combine the pineapple juice, soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, black pepper, and salt. Heat this mixture over medium heat, stirring gently until the sugar has completely dissolved and the mixture begins to simmer.

Thicken the Sauce: In a separate small bowl, whisk the cornstarch with water until smooth. Gradually pour this mixture into the simmering sauce, stirring continuously to avoid lumps. Cook for an additional 2-3 minutes or until the sauce thickens to a desirable consistency. Once thickened, remove from heat and set aside.

Fry the Tofu: Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the cubed tofu in a single layer. Fry for about 3-4 minutes on each side, flipping gently until all sides are golden brown and crispy. Be cautious not to overcrowd the skillet; if necessary, cook in batches to achieve the best texture.

Glaze the Tofu: After frying, reduce the heat to medium. Pour the prepared pineapple glaze over the crispy tofu, gently tossing to ensure each piece is evenly coated. Let the tofu sit in the glaze for about 2-3 minutes, allowing it to absorb the tropical flavors.

Serve: Carefully transfer the glazed tofu to a serving platter. For an enticing presentation, garnish with vibrant fresh pineapple chunks, a sprinkle of chopped green onions, and a few sesame seeds to add a touch of extra crunch. Serve warm alongside steamed rice or fluffy quinoa for a complete and delightful meal.
