2 cups cooked rotisserie chicken, shredded

1 cup fresh basil pesto

1 cup cherry tomatoes, halved

1 cup fresh mozzarella cheese, shredded or sliced

4 thick slices of sourdough bread

2 tablespoons olive oil

Salt and black pepper, to taste

Balsamic glaze (optional, for drizzling)

Fresh basil leaves, for garnish

Preheat the Oven: Start by preheating your oven to 400°F (200°C). This temperature will ensure your toasts become perfectly crispy.

    Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded rotisserie chicken and the fresh basil pesto. Use a spatula to stir the mixture until all the chicken is well-coated in the pesto. Season the mixture with salt and black pepper to your liking, keeping in mind the flavors of the other ingredients.

      Toast the Bread: Lightly brush both sides of each slice of sourdough bread with olive oil. Arrange the slices on a baking sheet in a single layer. Place the baking sheet in the preheated oven and toast the bread for about 5-7 minutes, or until the slices are golden brown and slightly crispy.
