Ingredients

1 lb (450g) ground turkey

1/2 cup (50g) whole wheat breadcrumbs

1/4 cup (25g) grated Parmesan cheese

1/2 cup (120g) fresh basil pesto (store-bought or homemade)

1/4 cup (30g) finely chopped onion

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup (40g) sun-dried tomatoes, chopped (optional)

Additional pesto for drizzling (optional)

Fresh basil leaves for garnish (optional)

Instructions

Preheat Oven: Heat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

Mix Ingredients: In a large mixing bowl, thoroughly combine the ground turkey, whole wheat breadcrumbs, grated Parmesan cheese, fresh basil pesto, finely chopped onion, minced garlic, egg, dried oregano, salt, and black pepper. If you’re opting for an extra flavor boost, fold in the chopped sun-dried tomatoes.

Form Meatballs: Gently mix the ingredients until just combined; avoid overmixing to keep the meatballs tender. With your hands, form the mixture into meatballs about 1.5 inches in diameter and place them on the lined baking sheet, ensuring they have space between them.

Bake Meatballs: Place the baking sheet in the preheated oven and bake the meatballs for 20-25 minutes, or until they are fully cooked and have developed a light golden crust. To ensure they’re cooked through, check that the internal temperature reaches 165°F (74°C).

Serve: After baking, carefully remove the meatballs from the oven. Drizzle a bit of extra pesto over the meatballs for an additional flavor kick, and garnish with fresh basil leaves if you like.

Enjoy: Serve the meatballs hot, whether alongside pasta, on top of a fresh salad, or as a delightful appetizer with toothpicks!
