Ingredients

1 lb flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 medium onion, sliced

3 cloves garlic, minced

1-inch piece ginger, freshly grated

1 tablespoon rice vinegar

1 tablespoon chili sauce (adjust according to your spice preference)

Salt and black pepper to taste

Cooked jasmine rice or steamed rice (for serving)

Chopped green onions and sesame seeds for garnish

Instructions

Marinate the Steak: In a mixing bowl, combine the thinly sliced flank steak with soy sauce, oyster sauce, and cornstarch. Use your hands or a spoon to mix thoroughly, ensuring all pieces are well-coated. Cover and let it marinate for at least 15 minutes, allowing the flavors to deepen.

Prepare the Vegetables: While the steak is marinating, take the time to slice the red and green bell peppers and onion into thin strips. Mince the garlic finely and grate the fresh ginger. Set all the prepared vegetables aside for later use.

Heat the Pan: In a large skillet or wok, pour in 1 tablespoon of vegetable oil and heat over medium-high heat. When the oil is shimmering, carefully add the marinated steak in a single layer. Sear for about 2-3 minutes, allowing the steak to develop a nice brown crust (you may need to do this in batches to keep the pan from being overcrowded). Once browned, remove the steak from the pan and set it aside on a plate.

Cook the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Toss in the sliced onion, both types of bell peppers, minced garlic, and grated ginger. Stir-fry for approximately 4-5 minutes until the vegetables are tender yet still retain a slight crunch.

Combine and Add Sauce: Return the seared steak back to the pan with the vegetables. Drizzle the rice vinegar and chili sauce over the mixture. Gently toss everything together to ensure all ingredients are well-coated with the sauce. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through and flavors meld.

Serve: Remove the skillet from heat. Serve the spicy pepper steak over a bed of fluffy jasmine or steamed rice. Garnish generously with chopped green onions and a sprinkle of sesame seeds for added crunch and flair. Enjoy your vibrant and spicy Asian twist on a classic dish!
