Ingredients

For the Cookie Base:

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup unsalted butter, softened to room temperature

1/2 cup packed brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup fresh peaches, chopped (approximately 2 ripe peaches)

For the Peach Ice Cream:

2 cups heavy whipping cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon vanilla extract

2 ripe peaches, peeled and diced

1 tablespoon fresh lemon juice

For Serving:

Fresh peach slices (optional for garnish)

Crushed graham crackers (for added texture, optional)

Instructions

Make the Cookies: Preheat your oven to 350°F (175°C). In a small mixing bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon until evenly combined; set this dry mixture aside.

In a large mixing bowl, combine the softened butter, packed brown sugar, and granulated sugar. Cream these together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes. Add in the egg and vanilla extract, mixing until fully incorporated.

Gradually add the dry ingredients to the wet butter mixture, stirring until just combined. Gently fold in the chopped fresh peaches, being careful not to overmix.

Line a baking sheet with parchment paper. Using a cookie scoop or a tablespoon, drop rounded portions of dough onto the prepared baking sheet, making sure to space them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown while the centers remain soft. Allow the cookies to cool completely on a wire rack.

Prepare the Peach Ice Cream: In a medium-sized mixing bowl, whisk together the heavy whipping cream, whole milk, granulated sugar, and vanilla extract until the sugar is fully dissolved.

In a separate bowl, mash the diced peaches with the lemon juice using a fork until slightly chunky. Fold the mashed peaches into the cream mixture, ensuring an even distribution.

Pour the combined mixture into an ice cream maker and churn according to the manufacturer's instructions until it achieves a soft-serve pudding-like consistency. Transfer the ice cream to an airtight container and freeze for at least 4 hours, or until it firms up completely.

Assemble the Sandwiches: Once the cookies have cooled and the ice cream is set, take one cookie and scoop a generous portion of peach ice cream onto its flat side. Top with another cookie, gently pressing down to create a delicious sandwich.

Optional: For additional crunch and flavor, roll the edges of the ice cream sandwich in crushed graham crackers before serving.

Serve immediately, or for easier handling, freeze the assembled sandwiches for an additional 30 minutes before serving.

Prep Time: 30 minutes | Total Time: 4 hours 30 minutes (including ice cream freeze time) | Servings: 8

                        - Presentation Tips: Serve the ice cream sandwiches on a rustic wooden board, garnished with fresh peach slices and a sprinkle of crushed graham crackers for visual appeal.
