2 medium ripe peaches, thinly sliced

1 cup fresh ricotta cheese

2 tablespoons honey (plus extra for drizzling)

1 teaspoon pure vanilla extract

4 slices of your favorite artisanal bread (sourdough or whole grain recommended)

2 tablespoons unsalted butter, softened

A pinch of flaky sea salt

Fresh mint leaves for garnish (optional)

Crushed pistachios or walnuts for added crunch (optional)

Prepare the Ricotta Spread: In a medium-sized mixing bowl, combine the fresh ricotta cheese, 2 tablespoons of honey, vanilla extract, and a pinch of flaky sea salt. Using a whisk or spatula, mix the ingredients until the mixture is smooth and creamy. Set aside to allow the flavors to meld.

    Toast the Bread: Heat a skillet over medium heat or preheat your oven's broiler to high. Generously spread softened butter on one side of each slice of bread. If using the skillet, place the slices buttered side down and toast until they are golden brown and crispy, approximately 2-3 minutes.
