4 boneless, skinless chicken thighs

2 ripe peaches, pitted and sliced

1 medium red onion, thinly sliced

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

½ cup chicken broth

¼ cup feta cheese, crumbled (optional)

Fresh basil leaves, for garnish (optional)

Prepare the Chicken: Begin by seasoning the chicken thighs generously with salt, pepper, and half of the fresh thyme leaves to enhance their flavor.

    Heat the Skillet: Place a large skillet over medium-high heat and add the olive oil. Allow it to heat until shimmering before carefully laying the seasoned chicken thighs in the skillet. Sear for approximately 5-7 minutes on each side until they are golden brown and fully cooked. Once done, remove the chicken from the skillet and keep it warm on a plate.

      Sauté Onions and Garlic: In the same skillet, add the thinly sliced red onion. Sauté for about 3-4 minutes or until the onion is softened and translucent. Add the minced garlic and stir for an additional minute, allowing the garlic to release its aromatic flavor.
