When it comes to baking muffins, the key to achieving a perfectly fluffy texture lies in the art of mixing. When combining your wet and dry ingredients, it’s essential to avoid overworking the batter. Overmixing can lead to dense, tough muffins instead of the light and airy texture we all desire.

Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 1/2 cups fresh peaches, peeled and diced

1/2 cup chopped walnuts or pecans (optional)

Turbinado sugar for topping (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by either lining it with paper liners or lightly greasing it with cooking spray to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Use a whisk to thoroughly combine the dry ingredients, ensuring there are no lumps.

Prepare Wet Ingredients: In a separate bowl, whisk together the melted butter (that has been cooled slightly), eggs, vanilla extract, and buttermilk until the mixture is smooth and well blended.

Combine Mixtures: Carefully pour the wet mixture into the bowl of dry ingredients. Gently stir with a spatula or wooden spoon until just incorporated. It is important not to overmix; it's perfectly fine if the batter remains slightly lumpy.

Fold in Peaches and Nuts: Next, gently fold in the diced peaches and chopped nuts (if you choose to include them). Be mindful to distribute them evenly without mashing the peaches.

Fill Muffin Tins: Using a spoon or a small ice cream scoop, fill each muffin cup with batter until they are about two-thirds full. For an extra touch of sweetness and texture, sprinkle a bit of turbinado sugar on top of each muffin.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes. The muffins should turn golden brown, and a toothpick inserted into the center of a muffin should come out clean when they are done.

Cool and Serve: After baking, allow the muffins to cool in the tin for about 5 minutes. Then, carefully transfer them to a wire rack to cool completely. These muffins can be enjoyed warm or at room temperature, making them perfect for breakfast or snacks throughout the day!

Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 12 muffins

Presentation Tips: For an attractive display, serve the muffins on a wooden board or a pretty cake stand. Consider garnishing with extra peach slices or mint leaves for a pop of color!
