Ingredients

4 medium zucchinis, spiralized into noodles

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

2 large eggs

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 cup marinara sauce, divided

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Set your oven to preheat at 375°F (190°C) to ensure it's hot and ready for baking.

Prepare the Zucchini Noodles: Place the spiralized zucchini noodles into a large colander. Lightly sprinkle them with salt and let sit for 10-15 minutes. This will help to draw out excess moisture. After the time is up, gently squeeze the noodles with your hands to expel any remaining water, ensuring the bake doesn’t get too watery.

Prepare the Cheese Filling: In a mixing bowl, combine the ricotta cheese, 1/2 cup of the shredded mozzarella cheese, and grated Parmesan cheese. Add the eggs, minced garlic, dried oregano, dried basil, as well as salt and pepper to taste. Mix thoroughly until all ingredients are well blended and smooth.

Integrate Noodles and Filling: Once the zucchini noodles are well-drained, fold them into the cheese mixture. Toss the ingredients together gently to ensure the noodles are evenly coated in the flavorful cheese mixture.

Assemble the Bake: At the bottom of a 9x13-inch baking dish, spread a thin layer of marinara sauce. Then, pour the zucchini noodle and cheese mixture into the dish, smoothing it out evenly. Top everything with the remaining marinara sauce and sprinkle the rest of the mozzarella cheese over the top.

Bake the Casserole: Cover the dish with aluminum foil to avoid over-browning, and place it in the preheated oven. Bake for 25 minutes, then carefully remove the foil and continue to bake for an additional 15 minutes, or until the surface is golden brown and bubbly.

Cool and Serve: After baking, take the dish out of the oven and allow it to cool for about 10 minutes. This will make slicing easier. If you like, garnish with fresh basil leaves for an extra touch of flavor and color.

Enjoy: Serve the Cheesy Zucchini Noodle Bake warm, relishing in this delicious, low-carb dish that's sure to satisfy your cheesy cravings!
