Orange Glazed Tofu Stir-Fry

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup snap peas, trimmed

2 green onions, chopped into 1-inch pieces

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup low-sodium soy sauce

1/4 cup fresh orange juice, freshly squeezed

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 teaspoon sesame oil

Zest of 1 orange, finely grated

Sesame seeds, for garnish

Cooked rice or quinoa, for serving

Instructions
 

Begin by cutting the pressed tofu into 1-inch cubes. Place the tofu cubes in a mixing bowl and sprinkle with cornstarch, tossing gently until they are evenly coated. This step will ensure your tofu achieves a delightful crispiness during cooking.

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the coated tofu cubes to the skillet. Cook for about 4-5 minutes, turning the tofu occasionally, until it turns golden brown and crispy on all sides. Once done, remove the tofu from the skillet and set it aside on a plate.

      In the same skillet, add the remaining tablespoon of vegetable oil. Once the oil is hot, add the sliced red and yellow bell peppers along with the snap peas. Stir-fry the vegetables for approximately 3-4 minutes, or until they are bright in color and tender-crisp.

        Add the minced garlic and grated ginger to the skillet with the vegetables. Continue to stir-fry for an additional minute, or until the garlic is fragrant and just starting to turn golden.

          In a separate small bowl, whisk together the soy sauce, fresh orange juice, brown sugar, rice vinegar, sesame oil, and orange zest until well combined. Pour this flavorful mixture into the skillet with the sautéed vegetables, allowing it to come to a gentle simmer.

            Carefully return the crispy tofu to the skillet, folding it gently into the orange glaze. Let the mixture cook for another 2-3 minutes, allowing everything to heat through and the sauce to thicken slightly.

              Just before serving, toss in the chopped green onions and stir everything together to ensure an even distribution of flavors. Remove the skillet from heat and finish with a sprinkle of sesame seeds for added texture.
