Ingredients

12 oz spaghetti

1 can (14 oz) diced tomatoes, undrained

3 cups vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 tsp dried oregano

1 tsp red pepper flakes (adjust to taste)

1/2 cup heavy cream or coconut cream for a dairy-free option

1/2 cup grated Parmesan cheese (optional; substitute with nutritional yeast for a vegan alternative)

1/4 cup fresh basil, chopped

Salt and pepper to taste

2 tbsp olive oil

Instructions

Begin by heating the olive oil in a large pot or deep skillet over medium heat. Once the oil is shimmering, add the finely chopped onion. Sauté for approximately 5 minutes, or until the onion becomes translucent and soft.

Next, stir in the minced garlic and allow it to cook for an additional 1-2 minutes, stirring frequently, until it becomes aromatic and takes on a slightly golden hue.

Now, add the uncooked spaghetti to the pot along with the undrained diced tomatoes, vegetable broth, dried oregano, and red pepper flakes. Stir everything together thoroughly to ensure the pasta is well distributed in the liquid.

Increase the heat to high, bringing the mixture to a vigorous boil. Once it reaches a boil, reduce the heat to medium-low and cover the pot. Let it simmer for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

After cooking, remove the pot from the heat. Gradually stir in the heavy cream (or coconut cream) and the grated Parmesan cheese (if using). Mix well until the sauce is creamy and all ingredients are thoroughly combined.

Fold in the chopped fresh basil and season with salt and pepper to your liking.

Serve the spaghetti hot, garnished with extra fresh basil and additional cheese, if desired. Savor your delightful one-pot meal!
