Ingredients

2 cups elbow macaroni

1 can (15 oz) sliced peaches in syrup, drained and chopped

3 cups vegetable broth

2 cups shredded sharp cheddar cheese

1 cup ricotta cheese

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Combine Ingredients: In a large pot, place the elbow macaroni, chopped peaches, vegetable broth, garlic powder, onion powder, smoked paprika, and a generous pinch of salt and pepper. Stir the ingredients together thoroughly until well mixed.

Cook the Mixture: Set the pot over medium-high heat and bring the mixture to a rolling boil. Once boiling, reduce the heat to medium-low to simmer. Allow it to cook for about 10-12 minutes, stirring occasionally until the pasta is al dente and most of the liquid is absorbed.

Incorporate the Cheeses: Remove the pot from the heat. Add in the shredded sharp cheddar and the ricotta cheese. Stir vigorously until the cheeses are completely melted and evenly distributed throughout the pasta, creating a creamy texture.

Taste and Adjust Seasoning: Before serving, taste the mac and cheese. Add additional salt, pepper, or smoked paprika to adjust the flavor to your preference.

Garnish and Serve: Spoon the creamy mac and cheese into bowls or on plates, garnishing generously with fresh basil leaves for a pop of color and a fragrant finish. Enjoy this delightful twist on a classic comfort dish!
