Ingredients

12 oz cheese tortellini (fresh or frozen)

2 cups fresh spinach, roughly chopped

1 tablespoon olive oil

3 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/4 cup sun-dried tomatoes, chopped (optional)

Fresh basil leaves for garnish

Instructions

Heat the Olive Oil: In a large pot or deep skillet, add the olive oil and warm it over medium heat. Once hot, introduce the minced garlic. Sauté for about 1 minute or until fragrant, stirring constantly to prevent it from burning.

Cook the Tortellini: Carefully add the cheese tortellini to the pot, followed by the vegetable broth. Bring the mixture to a gentle simmer. Cook according to the package instructions until the tortellini is tender—about 3-5 minutes for fresh tortellini or 6-8 minutes for frozen.

Add Cream and Seasoning: After the tortellini has cooked through, reduce the heat to low. Stir in the heavy cream, Italian seasoning, along with salt and pepper to taste. Allow the sauce to simmer for 2-3 minutes, giving it time to thicken up a bit.

Incorporate Spinach and Cheese: Mix in the chopped spinach and half of the grated Parmesan cheese into the pot. Stir continuously until the spinach wilts and the cheese melds into the rich, creamy sauce. If you’re using sun-dried tomatoes, fold those in now for an additional punch of flavor.

Melt the Mozzarella: Sprinkle the remaining mozzarella and the rest of the Parmesan cheese evenly on top of the tortellini mixture. Cover the pot with a lid and let it sit for about 2-3 minutes, allowing the cheese to melt and become wonderfully gooey.

Serve: Once the cheese is beautifully melted and bubbly, take the pot off the heat. Garnish your dish with fresh basil leaves for a burst of color and flavor before serving. Enjoy this comforting, creamy meal!
