1 lb ground beef or ground turkey

1 medium onion, finely diced

3 cloves garlic, minced

1 cup bell peppers, diced (choose any color for variety)

1 cup long-grain white rice, thoroughly rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

2 cups chicken broth or vegetable broth

1 tablespoon taco seasoning (store-bought or homemade)

1 teaspoon ground cumin

Salt and freshly cracked black pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Brown the Meat: Heat a large skillet over medium-high heat. Add the ground beef or turkey, breaking it apart with a spatula as it cooks. Brown the meat thoroughly, about 5-7 minutes, and drain any excess fat if necessary.

    Sauté Veggies: Add the diced onion, minced garlic, and bell peppers to the skillet with the meat. Sauté the mixture for 3-4 minutes, stirring occasionally, until the vegetables are softened and fragrant.

      Combine Ingredients: Stir in the rinsed rice, drained black beans, diced tomatoes (including their juices), chicken or vegetable broth, taco seasoning, ground cumin, and season with salt and pepper. Mix all the ingredients thoroughly for even distribution.

        Bring to a Simmer: Increase the heat to high and bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer for approximately 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

          Add Cheese: Remove the skillet from the heat. Sprinkle the shredded cheddar cheese evenly over the top of the rice mixture. Cover the skillet again and let it rest for about 5 minutes, allowing the cheese to melt beautifully.
