1 lb ground beef

1 medium onion, diced

3 cloves garlic, minced

1 cup long-grain white rice, uncooked

1 (14.5 oz) can diced tomatoes with green chilies

2 cups beef broth

1 cup corn kernels (fresh, frozen, or canned)

2 cups shredded cheddar cheese

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat & Prepare: Set your oven to preheat at 350°F (175°C). Gather all your ingredients and ensure you have a large oven-safe skillet or a suitable casserole dish ready for cooking.

    Sauté Vegetables: In your skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 to 4 minutes, stirring occasionally, until the onion becomes translucent and softens. Next, add the minced garlic and sauté for an additional minute, allowing its aroma to fill the kitchen.
