Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 cup mixed nuts (such as almonds, walnuts, and pecans), roughly chopped

1/4 cup dried fruit (such as cranberries, raisins, or apricots), chopped into small pieces

1/4 cup dark chocolate chips or cacao nibs

1/4 teaspoon sea salt

1 teaspoon pure vanilla extract

Optional: 1/4 cup seeds (such as pumpkin seeds or sunflower seeds), for added crunch and nutrition

Instructions

Prepare the Pan: Begin by lining an 8x8 inch (or comparable size) baking dish with parchment paper. Ensure to leave some overhang on the edges, which will make it easier to lift the bars out later.

Mix Wet Ingredients: In a medium microwave-safe bowl, combine the almond butter and honey (or maple syrup). Microwave the mixture on high for about 30 seconds until it’s warmed and slightly runny. Remove from the microwave and stir in the vanilla extract until the mixture is smooth and well combined.

Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, chopped mixed nuts, dried fruit, chocolate chips (or cacao nibs), optional seeds, and sea salt. Mix thoroughly to ensure all ingredients are evenly dispersed.

Combine Wet & Dry Mixtures: Pour the almond butter mixture over the dry ingredients in the large bowl. Using a spatula or a wooden spoon, stir everything together until all the dry ingredients are well-coated with the wet mixture.

Press into Pan: Carefully transfer the mixture into the lined baking dish. Use your hands or a flat spatula to press the mixture down firmly, creating an even layer. Make sure it is compact to help the bars stick together when set.

Chill: Place the baking dish in the refrigerator and chill for at least 1 hour, or until the mixture is firm to the touch. This step is crucial for setting the bars.

Slice and Serve: After chilling, lift the bars out of the pan using the parchment overhang. Transfer them to a cutting board and use a sharp knife to slice them into your desired bar or square sizes.

Store: For any leftovers, store them in an airtight container in the refrigerator for up to a week. Alternatively, you can freeze the bars for longer preservation.

Prep Time: 10 minutes | Total Time: 1 hour 10 minutes | Servings: Makes approximately 12 bars.

                    - Presentation Tips: Serve these crunchy bars on a wooden board with a small bowl of extra mixed nuts or dried fruits on the side for a lovely display. They also make a perfect on-the-go snack!
