Ingredients

2 cups frozen tater tots

6 large eggs

1 cup shredded cheddar cheese, divided

1/2 cup diced bell peppers (a mix of red and green)

1/2 cup cooked and crumbled breakfast sausage (or diced bacon)

1/4 cup milk

Salt and pepper, to taste

2 tablespoons chopped fresh chives or green onions (for garnish)

Olive oil spray for greasing

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to get it ready for baking the tater tot nests.

Prepare the Muffin Tin: Lightly coat a muffin tin with olive oil spray. This step is essential to prevent the nests from sticking, ensuring easy removal later.

Shape the Tater Tot Nests: In a mixing bowl, microwave the frozen tater tots for about 1-2 minutes until they're just thawed but not fully cooked. This will make them easier to mold. Take about 3-4 tater tots and press them into each muffin cup, forming a nest shape that covers the bottom and sides of the tin. Bake these nests in the preheated oven for 15 minutes or until they turn golden brown and crispy.

Prepare the Filling: While the tater tot nests are baking, crack the 6 eggs into a separate bowl. Add the milk, a pinch of salt, and pepper, and whisk everything together until the mixture is smooth and uniform. Next, fold in the diced bell peppers, cooked sausage (or bacon), and half of the shredded cheddar cheese.

Fill the Nests: After the tater tot nests have baked to perfection, carefully take the muffin tin out of the oven. Spoon the egg mixture evenly into each nest, filling them right to the top.

Bake Again: Sprinkle the remaining cheddar cheese generously over each filled nest. Return the muffin tin to the oven and bake for an additional 12-15 minutes, or until the eggs are fully set and the cheese is bubbly and slightly golden.

Garnish and Serve: Once baked, let the nests cool for a couple of minutes. Gently use a small silicone spatula to lift each nest out of the muffin tin. Finish by garnishing the tops with chopped chives or green onions for a fresh touch. Serve these delightful nests warm for a hearty breakfast.

Prep Time, Total Time, Servings: 15 minutes | 30 minutes | 6 servings

                  - Presentation Tips: Serve the nests on a colorful platter, and consider adding a side of fresh fruit or a light salad for a complete breakfast experience.
