Ingredients

1 cup cooked quinoa, cooled and fluffed

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (can be fresh, frozen, or canned)

1 red bell pepper, diced into small pieces

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, roughly chopped

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup shredded cheddar cheese (or a dairy-free alternative)

1 avocado, sliced (for topping)

Lime wedges (for serving)

Instructions

Prepare the Quinoa: If not already done, rinse the quinoa under cold water to remove any bitterness. Cook according to the package instructions until fluffy. Once cooked, let it cool down completely.

Mix the Base: In a large mixing bowl, combine the cooled, cooked quinoa, rinsed black beans, corn kernels, diced red bell pepper, finely chopped red onion, and chopped cilantro. Stir gently to mix the ingredients without mashing the beans.

Season the Mixture: Sprinkle in the ground cumin, chili powder, garlic powder, and add salt and pepper to taste. Mix thoroughly until all vegetables and beans are evenly coated in the spices.

Incorporate Cheese: Gently fold in the shredded cheddar cheese, ensuring it is evenly distributed throughout the mixture for maximum flavor.

Form the Bites: Preheat your oven to 375°F (190°C). Line a mini muffin tin with silicone or paper liners for easy removal. Use a spoon to scoop a generous portion of the quinoa mixture into each muffin cup, pressing down lightly to ensure it holds its shape.

Bake the Bites: Transfer the muffin tin to your preheated oven and bake for approximately 15-20 minutes, or until the tops of the bites are lightly golden brown and firm to the touch.

Cool Slightly: After baking, carefully remove the muffin tin from the oven. Allow the quinoa bites to cool for about 5 minutes in the tin before gently lifting them out to cool on a wire rack.

Serve with Flair: Top each quinoa bite with a slice of creamy avocado and drizzle fresh lime juice over the top for an extra burst of flavor. Serve immediately with lime wedges on the side for guests to enjoy.
