Ingredients

1 cup elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup milk

1/4 cup cream cheese, softened

1/4 cup unsalted butter

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

10 slices of cooked bacon, crumbled

1/2 cup panko breadcrumbs

Fresh chives, chopped for garnish (optional)

Cooking spray or muffin liners for easy cleanup

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). To prepare your muffin tin, spray it lightly with cooking spray or line the cups with muffin liners to facilitate easy removal of the cups later.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni to the boiling water and cook according to the package directions until al dente. Once done, drain the pasta thoroughly and set it aside.

Create the Cheese Sauce: In the same pot, melt the unsalted butter over medium heat. Add the softened cream cheese and stir until it is well blended with the butter. Gradually whisk in the milk, stirring until the mixture is completely smooth. Next, add the garlic powder, smoked paprika, and season with salt and pepper. Slowly incorporate the shredded cheddar cheese, stirring continuously until it’s fully melted and the sauce is creamy and cohesive.

Mix Everything Together: Fold the cooked macaroni and crumbled bacon into the cheese sauce. Stir gently to ensure that every piece of pasta is well-coated with the cheesy goodness.

Fill the Muffin Tin: Carefully spoon the mac and cheese mixture into each muffin cup, filling them right to the brim. To add an extra layer of crunch, evenly sprinkle the panko breadcrumbs over the tops of each cup.

Bake the Cups: Position the muffin tin in the preheated oven and bake for 20-25 minutes. Keep an eye on them until the tops are beautifully golden brown and crispy.

Cool and Release: Once baked, remove the muffin tin from the oven and allow it to cool for about 5 minutes. To release the mac and cheese cups, use a fork or a small spatula to gently ease them out of the tin.

Garnish and Serve: If desired, sprinkle the warm Mini Mac & Cheese Bacon Cups with fresh chopped chives for a pop of color and flavor. These cheesy bites make for a delightful appetizer or a fun party snack that everyone will love!
