1 lb ground beef or ground turkey

1 cup diced hatch green chilies (can be fresh or roasted)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and freshly cracked black pepper to taste

12 mini corn tortillas

1 cup shredded cheddar cheese

1 cup shredded lettuce

½ cup diced ripe tomatoes

1 ripe avocado, sliced

Fresh cilantro, chopped, for garnish

Stir occasionally and cook until the meat is browned and no longer pink, approximately 7-8 minutes. If there’s excess fat, drain it from the skillet before proceeding.
