Mini Grilled Cheese & Tomato Skewers

Ingredients
  

8 slices of bread (choose from sourdough, whole grain, or white)

8 ounces cheddar cheese, sliced into thin pieces

1 cup cherry tomatoes, rinsed and dried

2 tablespoons unsalted butter, softened to room temperature

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

8 bamboo skewers, each 6 inches long

Prepare the Bread and Cheese:

    Begin by cutting each bread slice into quarters to form small squares. Take one square of cheese and place it between two squares of bread to create a mini sandwich. Repeat this process until all slices of bread and cheese have been used.

      Make the Garlic Butter:

        In a small bowl, combine the softened butter, garlic powder, salt, and pepper. Mix well until all the ingredients are thoroughly blended and the mixture is smooth.

          Assemble the Skewers:

            Take a bamboo skewer and thread a cherry tomato onto it first. Next, add a mini grilled cheese sandwich. Continue this pattern, alternating between the tomato and the sandwiches, until each skewer has two mini sandwiches and one tomato, finishing with a cherry tomato at the end.

              Preheat the Grill or Skillet:

                Heat a grill or skillet over medium heat. If using a grill pan, it will give your skewers attractive grill marks.

                  Grill the Skewers:

                    Using a brush, coat the assembled skewers with the garlic butter mixture on all sides. Grill the skewers for about 3-4 minutes on each side, or until the bread turns golden brown and crispy, and the cheese inside has melted deliciously.

                      Garnish and Serve:

                        Once grilled, carefully remove the skewers from the heat and allow them to cool for a minute. If you like, top with fresh basil leaves for an extra burst of flavor. Serve immediately alongside marinara or your favorite dipping sauce for an enjoyable treat.
