1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and freshly ground black pepper to taste

1 cup canned black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup shredded sharp cheddar cheese

12 mini taco shells (store-bought or homemade)

Fresh cilantro, chopped, for garnish

Sliced jalapeños, for garnish (optional)

Sour cream, for serving

Sauté the Aromatics: In a large skillet set over medium heat, pour in the olive oil. Once the oil is shimmering, add the finely chopped onion. Sauté for about 2 minutes, stirring occasionally, until the onion becomes translucent and soft.
