Ingredients

1 lb (450g) ground chicken

2 cups fresh spinach, chopped

1/2 cup cream cheese, softened to room temperature

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon Italian seasoning

Salt and pepper, to taste

1 package of refrigerated biscuit dough (usually contains 8 to 10 biscuits)

Olive oil, for greasing the skillet

Optional: Red pepper flakes, for a spicy garnish

Instructions

Preheat Your Skillet: Start by preheating your oven to 375°F (190°C). Next, lightly grease a muffin skillet with olive oil to prevent sticking.

Cook the Chicken: In a large skillet over medium heat, add the ground chicken. Cook for approximately 5-7 minutes, stirring frequently, until the chicken is browned and fully cooked. Drain any excess fat to keep the mixture light.

Make the Filling: To the skillet with the cooked chicken, add the chopped spinach. Stir in the softened cream cheese, shredded mozzarella, grated Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper. Continue cooking for an additional 3-4 minutes until the spinach has wilted and the cheeses have melted, creating a cohesive filling. Remove from heat once combined.

Prepare the Dough: Open the package of refrigerated biscuit dough and separate the biscuits. On a floured surface or using your hands, flatten each biscuit into a circle about 1/4-inch thick.

Form the Cups: Carefully press each flattened biscuit into the greased muffin cups, ensuring that the dough covers the sides and leaves enough space in the center for the filling.

Fill the Cups: Spoon the chicken and spinach filling into each biscuit cup generously, making sure not to overfill to prevent spillage during baking.

Bake: Place the muffin skillet in the preheated oven and bake for 15-20 minutes, or until the edges of the biscuits are golden brown and the cheese is bubbly and delicious.

Cool & Serve: Once baked, allow the cups to cool for a few minutes in the skillet before gently removing them. If desired, sprinkle with red pepper flakes for a bit of added heat. Serve warm for a delightful treat!
