6 small whole wheat tortillas or lettuce leaves (for a low-carb option)

½ cup shredded carrots

½ cup celery, finely chopped

½ cup blue cheese or ranch dressing (for serving)

Prepare the Tofu: Start by cutting the pressed tofu into small, bite-sized cubes, roughly 1 inch in size. To ensure optimal crispiness later, pat the tofu cubes dry with a paper towel to absorb any excess moisture.

    Marinate the Tofu: In a medium-sized mixing bowl, combine the buffalo sauce, garlic powder, onion powder, salt, and pepper. Toss the tofu cubes in the sauce mixture, making sure each piece is thoroughly coated. Cover the bowl and let the tofu marinate for a minimum of 15 minutes to absorb the flavors.
