Ingredients

2 medium zucchinis

1 cup shredded cooked chicken (rotisserie chicken works wonderfully)

1/2 cup BBQ sauce (choose your favorite flavor)

1/2 cup shredded cheese (cheddar, mozzarella, or a blend)

1/4 cup diced red onion

1/4 cup corn (canned or thawed frozen)

1 tablespoon olive oil

Salt and freshly ground pepper to taste

Fresh cilantro, chopped (for garnish, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare the Zucchini Boats: Cut the zucchinis in half lengthwise. Using a small spoon, carefully scoop out the seeds and some flesh from each half, creating a hollow boat. Ensure you leave about 1/4 inch of zucchini at the bottom to keep the filling intact.

Season the Zucchini: Drizzle olive oil over the insides of the zucchini halves, then season generously with salt and freshly ground pepper. Place the prepared zucchini cups on a baking sheet, cut-side up.

Make the BBQ Filling: In a large mixing bowl, combine the shredded chicken, BBQ sauce, diced red onion, and corn. Stir in half of the shredded cheese until all ingredients are evenly coated and mixed.

Fill the Zucchini Cups: Take the BBQ chicken mixture and spoon it generously into each zucchini half, creating a slight mound on top.

Top with Cheese: Sprinkle the remaining shredded cheese evenly over the filled zucchini boats, ensuring a good layer for that melty finish.

Bake the Zucchini Cups: Carefully place the baking sheet in the preheated oven. Bake for about 20-25 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and allow to cool for a few minutes. If desired, garnish with freshly chopped cilantro before serving. These zucchini cups can be enjoyed warm as a delightful appetizer or as a satisfying main dish.
