Ingredients

1 ½ cups graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened to room temperature

3/4 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup sour cream

2 large eggs

2 ripe bananas, mashed until smooth

1/4 cup crushed pineapple, well-drained

1/4 cup chopped walnuts (or pecans, if preferred)

Whipped cream, for topping

Chocolate syrup, for drizzling

Maraschino cherries, for garnish

Sliced strawberries, for garnish

Instructions

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, mix together the graham cracker crumbs and melted butter until the crumbs are fully coated and resemble wet sand.

        - Firmly press the crumb mixture into the bottom of mini cheesecake pans (or a muffin tin) to create an even layer for the crust. Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and allow to cool while you prepare the filling.

          Make the Cheesecake Filling:

            - In a large mixing bowl, use an electric mixer to beat the softened cream cheese and granulated sugar together on medium speed until the mixture is smooth and creamy, about 2-3 minutes.

              - Add the vanilla extract and sour cream to the bowl, mixing until well combined and no lumps remain.

                - Incorporate the eggs one at a time, beating well after each addition to ensure a smooth consistency.

                  - Gently fold the mashed bananas, crushed pineapple, and chopped walnuts into the mixture until just combined, being careful not to overmix.

                    Assemble the Cheesecakes:

                      - Spoon the cheesecake filling over the cooled crusts in your pans, filling each one approximately three-quarters full. This will allow some space for the cheesecakes to rise.

                        - Place the filled pans back in the oven and bake for 20-25 minutes, or until the edges appear set but the centers still have a slight jiggle.

                          - Once done, turn off the oven and leave the cheesecakes inside with the oven door slightly ajar for about 30 minutes. This allows for gradual cooling, preventing cracking.

                            Chill:

                              - Carefully remove the cheesecakes from the oven once cooled to room temperature.

                                - Transfer them to the refrigerator to chill for at least 4 hours (or ideally overnight) until they are firm and set.

                                  Serve:

                                    - When ready to serve, take each mini cheesecake out of the pan and place them on individual serving plates.

                                      - Top each cheesecake with a generous dollop of whipped cream.

                                        - Drizzle chocolate syrup over the whipped cream and finish off with a maraschino cherry and a few slices of fresh strawberries, beautifully enhancing the presentation.

                                          Enjoy:

                                            - Serve chilled and delight in the creamy, fruity explosion of flavors found in your Mini Banana Split Cheesecakes!
