4 mini sweet bell peppers (choose vibrant colors: red, yellow, or orange)

1 cup cooked quinoa (for a different texture, substitute with rice)

1/2 cup black beans, drained and rinsed

1/2 cup corn (you can use canned or frozen)

1/2 cup diced tomatoes (fresh or from a can)

1/4 cup red onion, finely chopped

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1 cup shredded cheese (opt for cheddar or a Mexican blend)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Bell Peppers:

    - Rinse the mini bell peppers thoroughly under cool running water. Using a sharp knife, slice each pepper in half lengthwise. Remove the seeds and membranes gently. Brush the interior of each pepper half lightly with olive oil, then set them aside for later.

      Make the Filling:

        - In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, and finely chopped red onion. Season the mixture by adding ground cumin, chili powder, garlic powder, salt, and pepper. Stir well until all ingredients are mixed uniformly.

          Stuff the Peppers:

            - Take a spoon and fill each pepper half with the quinoa mixture, making sure to pack it slightly for a generous filling. Aim for an even distribution so each pepper is equally stuffed.

              Add Cheese:

                - Generously sprinkle shredded cheese on top of each stuffed pepper, ensuring they are well-coated to achieve that desirable gooey and melty effect in the air fryer.

                  Air Fry the Boats:

                    - Preheat your air fryer to 350°F (175°C). Arrange the stuffed pepper boats in the air fryer basket in a single layer. If your air fryer is smaller, you may need to work in batches.
