1 medium spaghetti squash

2 tablespoons olive oil, divided

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 pound ground turkey (or ground beef, if preferred)

1 jar (24 oz) marinara sauce (preferably low-sugar)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese, divided

1 tablespoon fresh basil, chopped (plus extra for garnish)

1 teaspoon Italian seasoning

Red pepper flakes (optional, for a spicy kick)

Instructions
 

Prepare the Spaghetti Squash: Preheat your oven to 400°F (200°C). Carefully slice the spaghetti squash in half lengthwise, then scoop out the seeds with a spoon. Drizzle the inside of each half with 1 tablespoon of olive oil and generously season with garlic powder, onion powder, salt, and pepper. Place the squash cut-side down on a baking sheet lined with parchment paper and roast in the oven for 40-45 minutes, or until it is tender and easily pierced with a fork.

    Cook the Meat: While the squash is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, add the ground turkey. Use a spatula to break the meat into smaller pieces and cook until browned throughout, about 6-8 minutes. Season the meat with salt, pepper, and Italian seasoning. Once cooked, if there is any excess fat, drain it from the skillet.

      Combine with Marinara: Pour the marinara sauce into the skillet with the cooked turkey. Stir well to combine and allow the mixture to simmer over low heat for about 5 minutes. This will help the flavors blend together beautifully.

        Prepare the Cheese Mixture: In a medium bowl, combine the ricotta cheese, half of the shredded mozzarella, and half of the grated Parmesan cheese. Add the chopped basil and season this mixture with salt and pepper to your liking.

          Assemble the Dish: Once the spaghetti squash is tender and slightly cooled, use a fork to scrape the insides into strands resembling spaghetti. In a large baking dish, mix the spaghetti squash strands with the meat sauce until all ingredients are thoroughly combined. Dollop the ricotta cheese mixture on top and sprinkle the remaining mozzarella and Parmesan evenly over the surface.

            Bake: Place the assembled dish in the preheated oven and bake for 20 minutes or until the cheese is melted, bubbly, and lightly golden. For an extra crispy top, you can broil for an additional 2-3 minutes, keeping a close eye to prevent burning.

              Serve: After removing the dish from the oven, let it cool for a few minutes. Before serving, garnish with additional fresh basil and a sprinkle of red pepper flakes for those who enjoy a little heat.
