4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 cup crumbled feta cheese

1 cup roasted red peppers (jarred or homemade), chopped into small pieces

1 cup fresh spinach, chopped

½ cup Kalamata olives, pitted and sliced

1 cup shredded mozzarella cheese

2 tablespoons extra virgin olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Tzatziki sauce (for serving)

Prepare the Filling: In a mixing bowl, combine the crumbled feta cheese, chopped roasted red peppers, fresh spinach, sliced Kalamata olives, and dried oregano. Mix well and season with salt and pepper according to your taste preferences.

    Spread the Hummus: Take one tortilla and spread approximately ¼ cup of hummus evenly over one side, covering it completely. This will act as a flavorful base for your quesadilla.

      Layer the Filling: On top of the hummus, add a generous layer of the Mediterranean filling mixture you prepared earlier. Then, sprinkle a handful of shredded mozzarella cheese over the filling, which will help the quesadilla hold together when cooked.
