1 lb ground chicken

1/2 cup whole wheat breadcrumbs

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 small onion, finely diced

1 large egg

1 teaspoon dried oregano

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon freshly cracked black pepper

2 tablespoons olive oil (for frying)

Optional: yogurt or homemade tzatziki sauce for serving

Instructions
 

Prepare the Mixture: In a large mixing bowl, combine the ground chicken, whole wheat breadcrumbs, crumbled feta cheese, finely chopped parsley, minced garlic, and diced onion. Mix until all ingredients are evenly distributed.

    Add Seasoning: To the bowl, add the egg, dried oregano, ground cumin, smoked paprika, salt, and black pepper. Using your hands or a spatula, mix thoroughly until you achieve a well-combined and uniform mixture.

      Shape the Patties: To prevent sticking, dampen your hands with a little water. Form the chicken mixture into small patties, approximately 2 inches in diameter. You should be able to make about 8-10 patties, depending on your sizing preference.

        Heat the Pan: In a large skillet, heat the olive oil over medium heat. When the oil is shimmering and hot, lower the heat slightly to medium-low to avoid burning the patties.

          Cook the Patties: Gently place the patties in the skillet, ensuring not to overcrowd them (you may need to do this in batches). Cook each side for 5-6 minutes until they are golden brown and cooked through. An internal temperature of 165°F (75°C) is ideal.
